Pizza Using Focaccia

2.5 cups water, warm
5 cups all purpose flour (bread flour is better, but optional)
2 tablespoons salt
1/2 cup olive oil
2 packets yeast (I prefer Platinum)
2 tablespoons minced garlic
2 tablespoons italian seasoning
1 tablespoon rosemary
Pinch of granulated sugar

In warm water, add granulated sugar and stir.  Add yeast and stir.  This is where you find out if your yeast is alive.  Allow to rest for about 15 minutes.  If it becomes bubbly, then it is okay to use.  If it is not bubbly, you may have gotten the water too hot, approx 100 degrees.

In a stand mixer with a dough hook, add your 5 cups flour and your yeast/sugar and water mixture.  Place on low speed and mix together.  Drizzle in the olive oil.  Mix for about 2 minutes then slowly adjust speed.  Add garlic, italian seasoning, salt and rosemary.  Total mixing time should be about 5 minutes.  In a clean bowl, drizzle oil and coat the bowl.  Turn out your dough and roll it around in the bowl until your dough has a nice sheen of oil.  Place cling wrap over bowl and allow to rest in a warm spot in your kitchen for about an hour or until doubled.  

Preheat oven to 425 degrees. (Convection, 400 degrees)

Generously oil a pair of half sheet pans.  If you want thicker, use one half sheet pan.  When I say generously oil, put a good amount of oil.

Punch dough down and let rest for an additional 15 minutes.

Separate dough into two parts if you plan to make two pizzas.  If making one, just put it in the oiled sheet pan.  You will want to begin pressing outward until it is edge to edge.  It will begin initially to snap back to center, just keep working it.  Poking fingertips into the dough as you work, but don't press completely through.  It is important to watch the video.  Made in video, two pans.  Allow to rest for an additional 15 minutes to relax the dough.  Drizzle copious amounts of oil over the top.

Parbake for approximately 12-18 minutes.  Or until your thermometer reaches 205 degrees in several areas.

Decorate your pizza with desired toppings and place in oven until cheese is thoroughly melted.  Approximately 8-13 minutes depending on how much cheese you have used.
