Pickled Red Onions
We did a live stream on Youtube yesterday, our very first one. I am a bit of a dork, so don't judge! I know you'll be judging! These sort of things take time to build. There were some funny moments, some embarrassing moments, and some memories for a lifetime. Thank to to all of you that came on to show support for a new channel. I wished I could have had a little more time. It's all good. There will be others.
Okay so, the recipe first and then the extraneous stuff later... I hate those blogs where the paragraphs keep scrolling and scrolling.... well, you get the idea.
What we used in the live:
Cut and place into a deep bowl:
6 red onions, peeled and cut julienneOptional: Jalapeno or other peppers
In a pot:
Get these ingredients to a rapid boil, adjust with more sugar or salt if desired.2:1 ratio of Sugar to Kosher salt (adjust as you go along) (used in video: 1 cup Kosher Salt 2 Cups Sugar; adjusted midway through cooking).
Red Wine Vinegar (about a half gallon)
2 TBL Pickling Spice (or more if you prefer)
1 TBL Dill Weed
24 Cloves Garlic
Jalapeno or other peppers if desired
When to a rapid boil, pour ingredients from pot into the deep bowl. Gently fold the onions, you'll begin to see the color changes. Do this for a couple of minutes and then shock with ice (about 2 cups of ice). Turn the ingredients until the ice has melted. Place in refrigerator for 2-4 hours minimum. These can be kept refrigerated for up to 3 weeks.

Derek of the Food Boat posted a question, what if I don't have any ice?
You can take a large BPA-free sports bottle and put a bunch of water in it (about 3/4 full) and freeze it. Pitch it into a cooler and take it over to the food boat with all your other stuff. Basically making an ice wand.
