Hawaiian Butter Mochi
Hawaiian Butter Mochi with Ube
4 large eggs
4 oz melted butter
2 teaspoons baking powder
1 can coconut milk
1 can evaporated milk
2 cups sugar
1 teaspoon vanilla
4 oz ube powder
Preheat oven 350 degrees.
Beat eggs and fold in sugar, combine with melted butter, begin adding your liquids, then powdered ingredients, finishing with vanilla. Whisk until combined. Pour into a greased 13x9x2 pan and bake on center rack for 1 hour.
Allow to cool thoroughly before attempting to eat it. This stuff feels like molten goo otherwise, and will burn your mouth and throat.
In case you're trying to cut back on your sugar intake, replace the 2 cups of sugar with: 1 Cup Coconut Palm Sugar and 1 Cup Erythritol.
This is gluten free. I have not tried to make this vegan.
